Like so many classic dishes, there's always a call for re-inventing the Greek salad. This one tosses aside the loose greens in favor of super crunchy wedges of iceberg lettuce. Then we add lemon cucumbers, dill-laced feta cheesel, adorable cherry tomatoes, bright pickled red onion, and crispy pita croutons.
On the side: dressing made with yogurt, Kalamata olives, garlic, and red wine vinegar.
