This is a salad that I first created at an Italian restaurant. It's simple, but undeniably delicious. The salad is built around the subtle bitterness of endive mixed with the spicy pepper flavor of arugula. Add in the delightfully salty taste of shaved pecorino romano, and the umami flavor of charred alba mushrooms. But it's the white truffle oil that's the key ingredient in this lemon & truffle vinaigrette. In this salad, the sum is truly greater than its parts.
