Plump dark purple Italian eggplant is sliced, lightly breaded, and fried until crisp. Only then do we layer it with ricotta and mozzarella, plus a bit of provolone. We deliver it with tomato basil sauce. We tend to dump it on the eggplant before heating it up, but you could serve it on the side if you're a sauce-on-the-side type person.
