Dry-farmed Early Girl tomatoes are packed with flavor. Farmers use a special technique to grow them. They withhold water after transplanting to force the roots deeper and produce more concentrated flavor in the fruit. Here, they are served with Belfiore bocconcini (baby mozzarella balls), micro basil, and a simple balsamic vinaigrette. Oh summer, it's great to see you again!

My fave tomato. Would have done it myself, but, well, didn't have the stuff. They did, and perfectly. I can sometimes over dress. They didn't.:-)

Lovely and light; we found the portions fine but could have used some more basil flavor as a personal preference. (Extra vinegar and oil with some crusty bread was mopped up with some crusty bread from home which added nicely to the appetizer size.)

Tomatoes were firm and perfectly ripe. Just wish there was more basil, could barely taste it. I did eat it cold though which I know is not ideal w caprese.

More quantity of mozzarella needed (ratio not as pictured). More flavorful mozzarella needed. Have had heirlooms from this chef (with the peach & burrata) that were more flavorful than these tomatoes.

Yes, these do taste richer than heirloom tomatoes, though I wondered why they were cut as wedges rather than circular slices to soak up more of the delicious vinegar and oil. A little more basil and mozzarella would also give more balance.
