Try this New Jersey version of the popular Canadian after-bar snack, poutine. Ours start with roasting Yukon gold steak fries until crispy brown. Then we smother them in a rich chicken gravy, and top with grated mozzarella cheese and a few thinly sliced scallions. The only thing you will need before digging in is a fork and napkins. Lots and lots of napkins.
