Just when we thought we'd seen every sort of kale salad, Chef Batson shows us something fresh. The kale in this one is joined by cracked bulgur that's season with Madras curry and caramelized shallots, which bring a nice heartiness to the dish. Add to that sweet currants, ricotta salata cheese, and toasted pistachios, and you have as much flavor as fiber!
On the side: a lemon juice and olive oil vinaigrette.
