An ode to the Thanksgiving side dish, this hearty cornbread-stuffed acorn squash features many favorite flavors from the holiday in a fun and inventive way. The cornbread stuffing is combined with crisp pancetta, tart apples, and tender fennel and used to fill a roasted acorn squash cup. Sage gravy is served on the side for you to spoon over as you wish.

The squash was so undercooked I couldn't eat it. It's really uncooked, not even just undercooked. Then whatever protein was in there was so tough and chewy (pork? Bacon?). Idea is good but execution was very poor.

This was delicious and is definitely one of my favorites!

I enjoyed the heck out of this dish. If I could do one thing differently, I would add some dried cranberries to the stuffing, or serve some cranberry sauce on the side.
