Conservative carrot cake gets some influence from the Caribbean in this slice of sweetness. Pastry chef Shelkowitz has added toasted flaked coconut to the cake batter and baked it until rich and moist. The whole thing is topped with a tart passion fruit and cream cheese frosting. It comes with a small scoop of her sweet and tangy pineapple jam as well as a sprinkling of more toasted coconut.
