My home state of Texas shaped me into who I am today. That's where I learned about real BBQ and that's where I learned how to make tacos from a friend's grandmother. Cochinita pibil is a regional Mexican recipe where pork is slow-roasted in citrus juices until tender. Use this as filling for the corn tortillas and top with the piquant ranchero sauce and pickled carrots and red onions for a vinegar finish. These mouthwatering tacos always make me think back to the unique experiences I had in the Lone Star state.

Delicious! It tasted really homemade and the portion of pork was really generous. The beans were pretty good but could have had a little more flavor. The picked vegetables and ranchero sauce were right on point. Good job!
