Feather-light cocoa sponge cake is rolled up tight with a caramelized white chocolate cream filling. Using caramelized white chocolate gives deeper, richer notes that temper the cloying sweetness that most people associate with white chocolate. The roulade is glazed with a thin layer of dark chocolate ganache. A great accompaniment to a cup of espresso.
