This dish is made by Emily Newmark. She replaced me as the chef of Claudine. I'm so happy she joined us at Munchery. I hope you enjoy her first dish as much as I do and look forward to more. Emily's chickpea cake is inspired by the flavors of a falafel. It is pan seared so you get the experience of a falafel without the guilt of eating one. It is served with a slaw filled with kale, red cabbage, green olives, feta, mint and cucumbers before being tossed with a lemon-oregano dressing. On the side is a Lebanese garlic sauce that is addicting. Growing up, Emily would beg her parents to take her to the restaurant that served this sauce, so with research and experimentation she discovered the perfect recipe to share with you!
