A rich stew is made with the North African spice blend ras el hanout, ginger, garlic, chickpeas, green olives, green lentils and saffron. The stew is served over a bed of couscous studded with dried apricots and toasted almonds. The dish is served with spicy cucumber harissa yogurt.
