Salsa verde is a what you get when you cook down roasted tomatillos, onions, and red peppers into a smoky salsa. Drizzle it over seasoned grilled chicken and sprinkle with the pleasantly salty cotija cheese. Enjoy over a bowl of white rice. Just be sure to top it with fresh cilantro and a squeeze of lime!
