We've taken the classic Italian saltimbocca (chicken wrapped in prosciutto and cooked until crispy) and served it on a soft potato roll that's spread with a house-made sage aioli. It's got pickled onions and peppery arugula to pile on top. On the side, we've included a artichoke and roasted red pepper salad with crumbled ricotta salata cheese.
