Chicken Enchiladas

Chicken thighs are seasoned in our achiote marinade then grilled and shredded. We mix the chicken with roasted poblanos, sliced onions, and a little cheese. The filling is wrapped in flour tortillas then topped with our tomatillo salsa and creamy oaxaca cheese. On the side is our take on Spanish-style rice made with quinoa and black beans, as well as a scoop of our pickled red cabbage laced with spicy jalapeños and cumin.

This one was a complete miss for me. The chicken was quite dry and bland. The tortillas were also bland since they weren't prepped in any way, just rolled around the chicken. The sauce wasn't Mexican/Spanish in anyway and overtly tangy.

The enchiladas and quinoa were delicious and I would have given 5 stars for those, but the red cabbage had a strong chemical taste. Not vinegar, more like a cleaning product. Yummy otherwise!

Good but had several bits of chicken cartilage or bone, distracted from the dish

Not bad tasting, but it's *not* an enchilada. This was on the dry side, the tortilla was flour, not corn, and there was no all enveloping chili sauce. As I said, it was not bad though. If I had a complaint it would be that the meat lacked texture.

I would have given this dish zero stars but the app wouldn't do that. This dish was disgusting! Went straight to the garbage after both my husband and I tasted it!

Wow...could they possibly have put less effort into this dish? The tortillas were doughy..almost raw and the chicken in the enchiladas was mushy. The sauce (a key component of enchladas) was non existent. This was a 1980s school cafeteria dish.
