Although plank cooking was made popular by contemporary chefs, this method of cooking has been used for centuries by the native people of the Northwest. Cooking salmon on a cedar plank imparts a sweet and smoky flavor to the fish. I've basted this filet in a soy-maple bourbon glaze and paired with roasted baby potatoes and a salad with watercress, grape tomatoes and citrus vinaigrette.
