We give you both toasted coconut and walnuts to garnish the cake layers. We split them up so one goes on each layer. This way, you can get big bites of one flavor or the other when you want. If you like the flavor more evenly dispersed, you can sprinkle some of the coconut and walnuts on each layer. Or, you can omit one completely if you’re not a fan– after all, your kitchen... your rules!
All you need is basic kitchen equipment (microwave, pots/pans, bowls, a spoon/whisk) and around 10 minutes to create these carrot cakes for two.
