We’re big fans of healthy grain bowls, and this one is perfect for anyone’s resolution. Amaranth, red quinoa, and bulgur are mixed together with dino kale, shredded carrots and beets, and some pomegranate seeds for a bit more crunch. We give you some lemon vinaigrette plus a fresh lemon to zest and juice into the mix so it’s nice and bright. An egg, which you cook however you like, is added on top of the creamy avocado slices.
All you need is basic kitchen equipment (pots/pans, bowls, a knife, salt, pepper, oil) and around 15 minutes and you’ve got a great dinner that will keep you feeling good about yourself.
