This is a light but hearty take on the traditional taco salad. Black beans and tofu are the main source of protein. The black beans are braised with ancho peppers, tomatoes and cumin. The tofu is marinated and grilled. They are served over kale, cabbage and with queso fresco jicama, pickled red onions, tomatillo salsa and baked tortilla strips.
