This dish is inspired by my love for Peruvian food. Japanese and Latin elements are combined to create something completely unique, and this dish represents some of those flavors. Calamari is flash-cooked and served over mixed greens tossed in a Ponzu sauce with pickled red onions and pickeled carrots for a tangy edge. Slices of the Peruvian potato Boniato (like a white sweet potato) adds substance to the salad and finish with a sprinkle of sesame seeds. A refreshing salad for any ocassion!
