Here's one of my favorite old school Italian pasta dishes. A "Soprano's" dish I used to make on Sunday nights before watching the show. Bucatini pasta is tossed in a "sugo" made with smoked Hobb's Guanciale (cured pork jowl), slow cooked with garlic, onion, tomato. Topped with arugula leaves and grated Pecorino Romano. Bada Bing!

Sauce had great flavor and the arugula added a great fresh and peppery taste. The meat had a lot of fat, like bacon and had a cured pork flavor. I wish there was a bit more pasta.

Completely mediocre! I am a big fan of Chef Levine but this dish did not do him justice. The sauce was watery to the point of having to spill some of it out! The bacon was excessively fatty and the dish lacked any complexity or flavor. Disappointing!

This had very nice flavor, although there were a lot of fatty bits in it. The only thing keeping this from being a 5-star is that Amatriciana has a kick to it, and this dish fell short on the kick. But the noodles and flavor was very nice.
