Whole chickens are slowly braised in a richly-spiced mole sauce that has been a labor of love for our kitchen. Our team based this sauce on years of eating their family's mole. Served with a crunchy chopped salad of iceberg & red cabbage garnished with jicama, tomatillos, radish, cornuts, and a creamy serrano-ranch dressing.
