This dish is a hodgepodge of New Orleans classics. Farm raised catfish is covered in creole seasoning and blackened on a cast iron pan, then served with dirty rice. For those of you that don't know what a New Orleans dirty rice is; it's pork sausage, chicken liver, and the holy trinity (green bell peppers, celery & onions) all cooked together with long grain rice. Steamed lacinato kale mixed with a creamy béchamel sauce and a pinch of nutmeg finishes off this meal. Squeeze the lemon crown over before serving and enjoy one of my favorite meals.
