Mississippi catfish fillets are dredged with my blackened spice rub, then pan-seared to lock in those spicy flavors. Served with vermicelli tossed with sautéed oyster and shiitake mushroom, sun-dried tomatoes, scallions and soba sauce. A side of steamed baby bok choy completes this meal.
