Black Forest Cake is a classic German dessert comprised of layers of chocolate cake with whipped cream and cherries. In my version, I use sour Morello cherries to give a tart counterpoint to all the sweetness. A saucy cherry compote is layered with devil's food cake, milk chocolate mousse and toasted almonds. To add to the indulgence, the cake is soaked in a kirsch-spiked syrup (Kirsch is a clear brandy distilled from cherries), and topped with a feather-light dollop of whipped cream.
