Vegetarians need comfort food, too! This is a spin-off on a classic. Instead of using pork sausage, we marinated fennel in Italian spices and roasted it until it's sweet and spicy. The fennel is combined with orecchiette pasta, broccoli rabe, mozzarella, Parmesan, basil, garlic, and a bright tomato sauce. The whole dish is topped with bread crumbs and baked until crispy.
Chef's note: To keep the crust crispy, heat this dish in an oven!
