In Rome, porchetta is an institution. The Italian dish is a boneless pork loin wrapped in pork belly and roasted crisp -- thereby creating the perfect ratio of fat to meat. I've put the sliced roast in an American context with sides of mashed potatoes, asparagus spears and a mushroom & andouille sausage gravy. Buon appetito!

Not even exaggerating when I say this was one of the best things I've ever eaten. Everything was so flavorful and god, the gravy complimented the porchetta and the potatoes perfectly. Would definitely order again.
