Pan-seared halibut is served with steamed beans, carrots and fingerling potatoes, tossed in a very small amount of butter, kosher salt, and fresh ground black pepper. A light mix of extra virgin olive oil with capers, fresh lemon, and dill, can be drizzled over the fish to bring out the fresh flavors. Enjoy!
